Ingredients :
- Shoarma/shawarma spices
(The Shoarma/Shawarma spice mix is ideal for giving a spicy taste to beef, chicken, lamb and all other grilled or baked meats.
1/2 teaspoon cayenne pepper
1 tsp. ground cinnamon
1 tsp curry powder
1 tsp garlic powder
1.5 tsp ground cumin
1 tsp dried coriander
3 tsp red pepper
1/4 tsp chili powder
1 tsp salt
- Chicken thigh meat (for two skewers)
1 kg chicken thigh meat (boneless chicken thigh)
4 tbsp olive oil
4 half limes
2 peppers, cut into large pieces
- Flatbread
350 g flour
250 ml Turkish or Greek yogurt
7 g of salt
1 tablespoon olive oil
- Garlic sauce
4 tbsp Turkish or Greek yogurt
4 tbsp mayonnaise
2 cloves garlic (minced)
1 1⁄2 tsp lemon juice
1⁄2 bunch fresh parsley (chopped)
salt and black pepper
Preparations:
- Chicken skewer
In a bowl, mix the olive oil and the spice mixture. Brush the chicken thighs with this mixture.
Cut the chicken thighs into pieces.
Form the skewers by alternating the chicken and peppers on the skewers.
First thread half a lime, the half lime will hold the meat in place. Then thread the chicken and pepper, finish with half a lime.
- In a good mix the ingredients for the garlic sauce so that the sauce is ready.
- Flatbread
In a bowl, mix the flour, yogurt, olive oil and salt. If the dough is too dry and grainy, add more yogurt. If the dough is too wet, add a little more flour.
Turn the dough out onto a floured surface and knead until it is no longer sticky and smooth.
Form 12 balls and flatten them on a floured surface to form flat, round discs.
Heat a pan in the Braaimaster by placing it on the firebox or on the grill directly above the embers.
Cook and brown each bun in the pan, without oil! If the heat is hot enough, beautiful bubbles will form. Watch the cooking carefully, which is very quick! Turn the bun over and cook and brown the other side.
- Meanwhile, cook the skewers on the Braai grill.
Cut the meat into thin slices, place the meat and rolls on a large board or plate. Squeeze a little lime over the meat. Add the garlic sauce.
