The principle of the firebox of a wood-fired barbecue Braai

The wood-fired barbecue Braai is a very special barbecue and also the use is rather special. The main element that will cook whatever you want is the "ember maker". This "ember maker" is generally placed in the middle of the Braai in order to cover a larger surface area for cooking the food. The ember makers of the Braai-Braaimaster barbecues are made of 304 stainless steel and are even double-walled so that they can withstand very high temperatures without any problems.

How does it work?
First, place some logs of wood upright in the ember maker and then light them. The ember maker has bars at the bottom to hold the logs in place and allows the embers to escape.
Once the embers have fallen, you can spread them on the surface where you want to heat or grill your food. This allows an old-fashioned way of cooking food whether on the grill or in the oven,  a wok or a pot, without direct contact with the flames to avoid burning your food. The chimney helps to avoid problems with smoke.
You can also leave the coals in the middle if you have large pieces of meat that need to cook for a long time.
For a longer cooking time, you may need to add more logs.
The double-walled hood distributes heat evenly: the temperature in a Braai easily rises to 600 degrees!
